This model is very very basic, just something i did on my free time the other day. doesnt include many factors, but is rather just a model to see projected earnings. Working capital could be considered the amount for the raw materials and employee salaries.

I haven't looked at this yet but I am sure I will find it interesting. I did something basic for a hotel which included two restaurants, and I was thinking of using that for an enquiry on a standalone restaurant. I will certainly comment after I have tweaked it; and certainly I will share it.

Working capital is tricky with restaurants; a lot will depend on credit supplies, pre-payments, size of restaurant, etc....I guess WC details need to be fixed based on peculiarities.

to me, i think the most important part for a model is the combination and the margin and costing for each place. I think margin is an important factor to learn at this platform too. so that we can compare the price and margin for each country and efficiency.

others are some how similar.
